Healthy Gluten Free Pancakes







I grew up on Bisquick pancakes and Aunt Jemima syrup! Delicious, but TERRIBLE for you! 🙈

I didn't just flip a switch one day and start eating healthy. It has bee a GRADUAL process of learning, and always progress, NOT perfection (obviously, as I continue to work on my emotional eating). 😍

I have tried LOTS of healthy pancake recipes and this is for sure my FAV! 

In fact, my little guy just told me, "Mommy, you make the BEST pancakes (although, truth be told- DADDY is usually the pancake maker at our house ;) )!" ❤️ But I'll take it- feeding him healthy foods when he doesn't even know it! 👏👏




Ingredients:
1 cup unsweetened almond milk
2 large eggs
1 large ripe banana
1 tsp vanilla
1 tsp baking powder 
1/2 tsp ground cinnamon
1 dash sea salt
2 cups rolled oats
1/2 tsp coconut oil

Instructions:
1. Place everything EXCEPT coconut oil in blender. Cover. Blend until smooth
2. Heat oil in skillet over medium heat
3. Pour 1/4 cup batter into the skillet; cook for 2-3 min. Flip. Cook another 90 sec.
4. Continue with remaining batter
5. Serve with berries, pure maple syrup, peanut butter- whatever is your fav healthy topping! 😘

Are You Following Your DREAM???

I admit- 5 years ago, I didn't even THINK about what my dreams were! I sure didn't have ONE big DREAM that was pushing me to be better every day and driving me to WORK and getting me EXCITED!

I was just SHOWING UP to my life, not proactively MAKING things happen! I was settling for WAY less than my potential and I was honestly OK with just getting by and being "comfortable."

Do you feel that way too???

I know for me, I was a dentist, making enough money, floating through life easy enough, going through the MOTIONS of life. I wasn't excited about much, was depressed about leaving my baby every day, and was sick and tired of being sick and tired.

But it wasn't ENOUGH. I didn't care enough to actually CHANGE. When I discovered coaching and started doing it for ME, I was INSPIRED. I found something I loved and was PASSIONATE about again. I'm not saying that has always been perfect- trust me, I've run out of willpower in that realm too before- I mean, it's still WORK. ;) But, because of it, I discovered my love for READING again and I have been reading books on leadership, growth, productivity and goal-achieving for 5 years now!!!

This February, I became a John Maxwell Team certified coach, speaker and trainer. I have read so many of his books and to now be associated with him and able to TEACH his philosophies and trainings- kinda a BIG DEAL. But guess what? I've been NERVOUS and holding myself back from actually STARTING to SHARE more about it and change even MORE lives through what I've learned.

But, more and more, I've realized my DREAM of SPEAKING! So, this last weekend, I WENT FOR IT, and gave my FIRST real presentation about Putting Your Dream to the Test. You can watch it HERE.


I want to encourage you TODAY to watch and to DIG DEEP and discover YOUR dream and START pursuing it NOW!!! Be the one who ACHIEVES your dream and sets the EXAMPLE for your doubters and for your family!

80 Day Obsession Round 2!!!!

OMG! I cannot even believe I'm almost DONE with our AMAZING 80 Day program! Seriously- it has changed my outlook on fitness, my confidence AND gotten me back into my skinny jeans! Whoop Whoop!!!!

In all my EXCITEMENT, I will be starting ROUND TWO on April 30 and I'm taking 10 NEW ladies with me!!! Talk about MASSIVE benefit for you since I've already been through it and had SUCCESS because new I get to give ALL my tips and tricks with YOU!!!

So if you've been stuck with the muffin top and dreading looking in that closet every day- paralyzed by all the clothes that DON'T fit anymore- I got you! That's EXACTLY where I was just THREE months ago!!! And honestly I DREADED getting started with a new program for fear of actually sticking with it for 80 days! But, I've done it! Yeah, I have a week left (including travel to Bermuda!), but I already have it planned and KNOW I'm gonna ROCK it- because I have a PLAN and am DETERMINED (and you can grow this determination too!).

I've got a couple big trips coming up (Bermuda and Mexico) so I'm gonna be working out but not following 80 Day Obsession, but we'll be back ALL IN on April 30! Making the deadline for this AMAZING support system April 23!
